for whatever reason, a lot of online tutorials don't even touch semantic html until near the end. it's truly bizarre

100% agree, I understand why DNIs get mocked so much but at the same time they do serve as a useful way of establishing what kind of behavior u don't wanna be associated with

WHY is it still broken
might be to do with the max width being set in rems without an explicit font-size being set at the html level, so potentially nc's default is different to yours so it looks broke. try max-width with px just to see if it changes the preview, then work back from there
